Homemade Chicken Pot Pie

2 cups cooked chicken
2 cups mixed vegetables, frozen
1 can Cream of Chicken Soup (Mushroom or celery can be used instead)
1/2 stick of butter
1/2 to 3/4 soup can of milk
Bake chicken and tear into pieces. I usually just bake some chicken parts and take out the bones and take off the skin. Then I tear up the meat.
Put 2 cups of mixed vegetables into 3qt. pan with 1/2 stick of butter. I use a baking pan about 8X11, and it works just fine. Heat frozen vegetables with the butter for 2 to 3 minutes in microwave on high. They do not need to be totally unfrozen when finished, just slightly unthawed. Remove pan from Microwave. In a separate bowl, mix together soup and milk. Then pour this into the vegetables in the pan. Mix well. Now spread out the chicken evenly over the soup and vegetables.
Now to make the crust!
1-1/2 cups of Bisquick (I used all purpose Jiffy Mix) and 1-1/2 cups milk. Get a bowl and put the Bisquick in it. Then slowly add the milk. You may not use all of the 1-1/2 cups of milk, but be sure the mixture is not to thick to spread over pan. Once you have mixed this well, pour over chicken and vegetables evenly. Bake at 350 for 45 minutes or golden brown. (Mom may want to make a double batch with the way Dad eats!)

Mom, you won't believe what happened to me the other day when I made this. All week I have been feeling bad and having to take breathing treatments. Well, Thursday I made this Pop Pie. I was so hungry that I told my hubby to put it in the fridge for me, and I took a plate full and sat down to watch TV. I went to bed and assumed he had put it away. I got up the next morning with a migraine and breathing problems, and guess what was still on the counter??? You got it! I just about lost it. I felt so bad. So I made a Chicken & Broccoli Casserole Friday and put it in the fridge myself. The thing is that instead of Maynnaise, I almost put Peanut Butter in it! See, told you I wasn't feeling good! lol If anyone wants the Chicken & Broccoli Casserole recipe, just ask Mommy for my email address, and I'll be glad to send it!
